Crispy Citrus Chicken Thighs

Marinate overnight for quick and delicious crispy citrus chicken!

  • 8 Chicken thighs Bone in
  • 1/4 cup olive oil
  • 4 cloves garlic minced
  • 2 lemons 1 juice & zest, 1 sliced
  • 2 oranges 1 juice & zest, 1 sliced
  • 2 limes 1 juice & zest, 1 sliced
  • 1 teaspoon crushed red pepper flakes To taste
  • 1 teaspoon paprika
  • 2 tbsp Butter softened
  • 2 teaspoon dried thyme or fresh chopped
  • salt and pepper to taste
  • 2 tablespoons Italian seasoning
  • 2 Red onion Sliced in thick rounds
  • 1 tbsp Parsley Chopped for garnish


  1. Zest one of each citrus and set aside. Then juice into a large bowl (or gallon size ziplock bag)together with olive oil, 3 cloves of garlic, 1 tbsp Italian seasoning, 1 tsp thyme, paprika, red pepper flakes, and salt and pepper. Add chicken, turning pieces to coat. Marinate overnight or a couple hours.

  2. Preheat Oven to 400° 

  3. Place onion rounds on the bottom of a 13x9 baking dish as a bed for the chicken. 

  4. In a small bowl add the zest of all three citrus, thyme, 2 tbsp softened butter, one garlic clove finely chopped, salt and pepper.  Mix until combined. 

  5. Remove the chicken from the marinade and pat dry. Loosen the skin on each chicken thigh and put a small amount of the butter mixture underneath each thigh.  Sprinkle with 1 tbsp  Italian seasoning, salt and pepper.

  6. Place thighs skin side up on top of the onions. 
  7. Arrange slices of citrus around the chicken.  

  8. Roast uncovered for 45 minutes to 1 hour, or until chicken reaches 165° and and juices run clear.

  9. Garnish with fresh chopped parsley and served with roasted broccoli sprinkled with Parmesan cheese or even a lemon pasta.  Enjoy!
