Spicy Asian Chicken Thighs with Bok Choy

 On a sheet pan, this delicious meal comes together so quick, you will be sitting down to dinner in 30 minutes!   This recipe can easily be doubled to serve four.

Ingredients

  • 4 Chicken Thighs Boneless
  • 1 Fresh Bok Choy Sliced in half
  • 1 Tbsp Olive oil
  • 1/2 Cup Hoisin sauce
  • 1 Tsp Brown sugar
  • 1 Clove Garlic Grated
  • 1 Tsp Fresh Ginger Grated
  • Salt and pepper To taste
  • Sesame seeds If desired

Instructions

  1. Preheat the oven to 400°. Cover a sheet pan with aluminum foil and place chicken thighs on one side, and the bok choy on the other.  Lightly coat the bok choy with 1 tablespoon of olive oil.

  2. Put Hoisin sauce in a small bowl and grate in the garlic clove and ginger. Add the brown sugar and whisk together until incorporated. 

  3. Pour the sauce over the chicken and drizzle a bit over the Bok Choy. 

  4. Roast for 20 minutes.   Remove the Bok Choy and raise the baking sheet to the top rack in the oven and broil for five minutes to caramelize the top of the chicken. 

  5. Plate the Bok Choy and chicken. Use the pan juices to dress both and top with sesame seeds if desired. Enjoy!
