Italian pesto is so versatile, changing just an ingredient or two can make it taste completely different. From basil to parsley or red peppers to olives, this gorgeous condiment dresses up a simple plate. Use on fish, chicken, pork, pasta… The possibilities are endless.I used it as a marinade for chicken cutlets but it would also be great on fish, shrimp or pork tenderloin! I think I’m going to make this again and try it at some other things. Tonight I grilled the chicken and had it with a side dish of pappardelle pasta covered with the green olive citrus pesto. If you would rather have it as a sandwich, it would be great on a Ciabatta roll with mozzarella cheese!
Grilled Chicken with Green Olive Citrus Pesto
Pesto, this Italian condiment can dress up a simple plate with fantastic flavor.
- 1 1/2 Cup Parsley Leaves
- 2 Cloves Garlic
- 2 Tbsp Orange zest
- 3 Tbsp Orange juice
- 1 Tbsp Lemon zest
- 1 Tbsp Lemon juice
- 1/2 Cup Good green olives
- 1/2 Cup Sliced Almonds
- 1/2 Cup Extra Virgin Olive Oil
- 3/4 Cup Parmesan cheese Grated
- 1 Tbsp Honey Optional
- 1/2 Tsp Red pepper flakes Optional
- 4 Chicken cutlets
Using a small food processor, process all of the ingredients until smooth, except for the cheese and the oil.
With the processor running slowly add the oil until it’s all Incorporated. Transfer the pesto to a container and stir in the cheese. If you choose, add the red pepper flakes and honey. Season with salt and pepper to taste.
Place 4 chicken cutlets into a zip top bag and add half of the pesto. Smoosh the bag making sure all of the chicken is fully coated in the pesto. Place in the refrigerator for a few hours to marinate.
Use the rest of the pesto over pasta or if you do not use all of the pesto, it can be refrigerated for up to three days or frozen for up to two months. Place plastic wrap flush to the surface or top with a thin layer of olive oil if you place in the refrigerator. This prevents browning.
Warm grill to medium high and grill chicken cutlets for 2 to 3 minutes per side depending on the thickness.
Serve with pasta covered in the pesto or on a ciabatta roll with mozzarella cheese.
