It feels like the calm before the storm. I know in just a few days I will be up at dawn, prepping and cooking our family Thanksgiving dinner. So today is somewhat of a practice run because I got up at dawn and decided to make these cheesy potatoes with an egg and enjoy it in my quiet kitchen before the roar of the family interrupts. I began by cutting up two small yellow potatoes and decided to add some shallots, garlic, and a Sage Citrus seasoning.After roasting for 20 minutes I stirred in some crispy bacon, chopped spinach and topped it with some grated asiago cheese. This would make a delicious side dish. While the cheese was melting, I fried up one simple egg and this became my calm before the storm breakfast potatoes and eggs. This would also make a great potato side dish without the egg.
Cheesy Potatoes with Eggs
Creamy roasted potatoes, crispy bacon and asiago cheese, what more can you ask for? Empty your refrigerator and make this your own. Top with an egg for breakfast or use it as a side dish. Either way this is a delicious potato dish.
- 2 Yellow baby potatoes Small cubes
- 1 Tbsp Olive oil
- 1 Tbsp Sage Citrus Seasoning
- 1 Small Shallot Diced
- 1 Clove Garlic Finely minced
- 1 Crispy bacon Roughly chopped
- 1/4 Cup Spinach Chopped
- 2 Tbsp Asiago cheese Grated
- Salt and pepper To taste
- 1 Egg Fried or poached
Preheat oven to 400° can slice potatoes into small dice to cook quickly and evenly. Place in a small casserole type dish and cover with olive oil, toss. Add shallots, garlic and Sage citrus seasoning. Toss together and roast for 20 minutes.
Top with crispy bacon and spinach and stir. Add asiago cheese and return to the oven until the potatoes are done and a fork slides easily into a cube.
Well the cheese is melting, make your egg. Pride is easy, poached would be fantastic too. Remove the dish from the oven and top with an egg. Enjoy in complete silence!
