Comfort food meets weeknight meal! These delicious grilled lamb chops with mushroom risotto will be a hit on your table.
I love lamb and cook it as often as I can. It’s so easy to grill and picks up great marinades quickly. I used an Herb marinade seasoning with a little extra oregano, lemon zest and red pepper flakes in olive oil, and marinated over night. And with the new Food Network Risotto kit, The mushroom risotto came together in just 20 minutes, with hardly any stiring!
I found this my Kroger but you can find it in most any grocery store! So this meal is quick and easy, and absolutely delicious!
Grilled Lamb Chops with Mushroom Risotto
Delicious and juicy grilled lamb chops with quick and easy mushroom risotto. Sound good? On the table in 30 minutes for a great weeknight meal!
- 8 Lamb chops
- 3 Tbsp Herb Marinade seasoning
- 1 Tbsp Dried oregano
- 1 Tsp Red pepper flakes
- 2 Tbsp Lemon zest
- 1/2 Cup Extra virgin olive oil
- Salt & pepper To taste
- Mushroom Risotto Prepared according to package directions
In a bowl, whisk together the olive oil, seasonings and lemon zest.
In a gallon size zip top bag, add the lamb chops. Pour the marinade over the chops, squish until coated. Refrigerate overnight or at least 2 hours. Bring to room temperature before grilling.
Heat the grill to Medium high and sear the lamb chops on the first side 2-3 minutes. Flip and grill an additional 3-4 minutes or until 145° for medium rare to 165° for well done. I like 150° for Medium.
Remove the lamb chops from the grill cover lightly with aluminum foil and let rest for 10 minutes.
Plate the risotto with the lamb chops and enjoy!
