Skirt steak is so versatile! When I began cooking dinner, my grandson asked for fajitas. I had no problem using half of the steak for his meal and half for mine. Skirt steak, in two different ways!One side was grilled medium with garlic herb butter and Israeli couscous with spinach & cranberry.
The other steak was grilled medium well for steak fajitas with all of the fixings.

Skirt steak with garlic herb butter AND Steak Fajitas
Skirt steak comes in a long narrow strip that makes it easy to cook to different temperatures and with different seasonings. I used a garlic herb seasoning on one steak and a fajita seasoning on the other. I grilled them side by side and had two different meals on the table at the same time!
Ingredients
- 1 lb Skirt steak
- 2 Tbsp Garlic herb seasoning
- 2 Tbsp Butter Softened
- 1 Tbsp Fajita seasoning
- 1 Cup Israeli couscous Cooked
- 1/4 Cup Baby Spinach Chopped
- 2 Tbsp Dried cranberries
- 2 Tbsp Olive oil
- 1 Tbsp White wine vinegar
- 4 Tortillas
- Fajita fixings Lettuce, tomato, onion, guacamole....
Instructions

Slice skirt steak in half and season both sides of each with the seasoning. One with 1 Tbsp Garlic and herb, the other half with fajita seasoning. Let marinade for a couple hours, overnight or season and bring the steaks to room temperature and grill!

Combine 1 tbsp of garlic and herb seasoning with the softened butter. Set aside.

Mix the cooked couscous with the spinach and cranberries. Drizzle with olive oil and white wine vinegar. Toss and set aside.

Chop lettuce, slice onion, chop tomato, get together any toppings that you would like for the fajitas.

Grill Medium steak to 140°-145°F , Medium Well 150°-155°F

Remember, always let your steaks rest at least 5 to 10 minutes so that when you cut them all the juices stay inside and not run out. Skirt steak must be sliced thin and against the grain. This guarantees tender and juicy deliciousness!

To serve, slice the garlic and herb steak and top with herb butter. Serve with 1/2 cup of couscous.
Slice the fajita steak into thin strips, serve on tortillas with sour cream and fajita fixings! Enjoy!
