I cubed 2 frozen chicken breasts and marinated it in this spicy orange marinade first thing this morning.
When I came home for dinner I started the grill. I threaded the chicken onto skewers, made some vegetable brown rice, and sat down to dinner in less than 30 minutes!
Spicy Orange Chicken
Marinate the chicken, start the grill, thread the chicken onto skewers, make some vegetable rice, and sit down to dinner in less than 30 minutes.
- 1/4 cup orange juice
- 2 Tbsp Orange marmalade
- 1/2 tsp Chinese Five Spice powder
- 1 Tbsp soy sauce
- 2 Tbsp rice vinegar
- 2 garlic cloves grated
- 1 tsp fresh ginger grated
- 1/2 tsp toasted sesame oil
- 1 tsp red pepper flakes [more or less to your taste]
- 1 lb chicken breast cubed
Place chicken pieces in a gallon size zip-top bag and set aside.
In a Zip-top bag, combine all marinade ingredients, squish to combine.
Place the chicken in the bag, seal, squish and marinate in refrigerator at least one hour, or over night.
STOVETOP: Add chicken to a large sauce pan and saute 5 to 6 minutes over medium high heat stirring occasionally.
GRILL: Thread chicken on skewers and grill. Use left over marinade to baste the chicken while cooking on the grill.
Cook the chicken until it is golden brown and reaches 165°
Remove chicken from pan or grill.
Serve chicken over rice for a quick and delicious dinner on the table in minutes!
